This side dish is a perfect substitution for those who don't care for the sweetness of sweet potatoes but still want a beautiful root vegetable side dish for the holidays or any meal!
Cider Glazed Roasted Carrots
5 large carrots peeled and sliced
1-12 oz bottle Crispin Original
1 tbsp fresh grated ginger
1 tspn minced garlic
1 tbsp minced shallots
Pre-heat oven to 350F
1. Pour entire bottle of Crispin into a sauce pan. Add all other ingredients and cook on medium heat until reduced to about 1/4 cup.
2. Take sliced carrots and place in a baking dish, pour cider reduction over the carrot and toss until fully coated.
3. Salt and pepper to taste and bake in oven until tender (about 20 minutes)
4. Spoon into a serving dish and enjoy with a Crispin Cider!
