Summer 'Caprese' Salad

  • Summer 'Caprese' Salad With Blackberry Balsamic Reduction

    1/2 c Fox Barrel Blackberry Pear Cider
    1/2 c Good quality Balsamic Vinegar
    3 Heirloom Tomatoes
    1 lb Fresh Mozzarella
    1 Bunch Fresh Mint
    1 Bunch Fresh Basil
    Olive Oil
    Salt & Pepper

    1) Reduce your cider and balsamic together in a small saucepan- starting with the heat on medium until almost simmering, then lower to medium-low until reduced by half. Set aside to cool.

    2) Slice your tomatoes and cut your mozzarella. Tear off mint and basil leaves from their stems. Sprinkle all with a little salt and pepper to taste.

    3) Assemble your salad in alternating layers of tomato, mozzarella, and herbs. Use as many or as little herbs as you'd like. Drizzle with a little olive oil and then the blackberry balsamic reduction.

  • Also great as an individual sized salad, just make tall single stacks on small salad plates.

  • For a simple appetizer; buy cherry tomatoes and bocconcini mozzarella balls- simply stack, skewer, and drizzle!
